Steak Quesadilla
Some days I want lunch that’s hot, filling, and requires almost no thinking. This is one of those meals.

- Large flour tortillas I usually grab burrito-size
- Shredded quesadilla cheese
- I rotate between queso quesadilla blends — whatever’s open in the fridge
- Pre-cooked fajita steak
- I used Soules Kitchen fajita steak this time
- Optional: oil or butter for the plates sometimes I don’t even bother
How I Make It on the Griddler
Preheat the griddler.
Lay down a tortilla.
Add shredded cheese.
Scatter a few pieces of fajita steak.
Add more cheese (always more cheese).
Fold the tortilla and close the lid.
Walk away for a few minutes.
No flipping. No worrying about hot spots. The top plate does the work.
When the outside is golden and the inside is melted, it’s done.
