Steak Quesadilla

Some days I want lunch that’s hot, filling, and requires almost no thinking. This is one of those meals.

Equipment

  • Cuisinart Griddler

Ingredients
  

  • Large flour tortillas I usually grab burrito-size
  • Shredded quesadilla cheese
  • I rotate between queso quesadilla blends — whatever’s open in the fridge
  • Pre-cooked fajita steak
  • I used Soules Kitchen fajita steak this time
  • Optional: oil or butter for the plates sometimes I don’t even bother

Instructions
 

  • How I Make It on the Griddler
  • Preheat the griddler.
  • Lay down a tortilla.
  • Add shredded cheese.
  • Scatter a few pieces of fajita steak.
  • Add more cheese (always more cheese).
  • Fold the tortilla and close the lid.
  • Walk away for a few minutes.

Notes

No flipping. No worrying about hot spots. The top plate does the work.
When the outside is golden and the inside is melted, it’s done.
