My Favorite Lazy Lunch on the Griddler

Some days I want lunch that’s hot, filling, and requires almost no thinking. This is one of those meals.

I’ve had my Cuisinart Griddler since 2021, and while it does a lot of things, this is what I still make on it the most: quesadillas. No flipping. No babysitting a pan. Just throw everything on, close the lid, and wait for the cheese to do its thing.

This version uses pre-cooked fajita steak, which makes it even easier — perfect for a weekday lunch when you’re hungry now.


What I Use (Nothing Fancy)

This isn’t a recipe so much as a routine.

  • Large flour tortillas (I usually grab burrito-size)
  • Shredded quesadilla cheese
    (I rotate between queso quesadilla blends — whatever’s open in the fridge)
  • Pre-cooked fajita steak
    (I used Soules Kitchen fajita steak this time)
  • Optional: oil or butter for the plates (sometimes I don’t even bother)

That’s it.


How I Make It on the Griddler

  1. Preheat the griddler.
  2. Lay down a tortilla.
  3. Add shredded cheese.
  4. Scatter a few pieces of fajita steak.
  5. Add more cheese (always more cheese).
  6. Fold the tortilla and close the lid.
  7. Walk away for a few minutes.

No flipping. No worrying about hot spots. The top plate does the work.

When the outside is golden and the inside is melted, it’s done.


Why I Love Using the Griddler for This

  • Even browning every time
  • Hands-off cooking — I don’t stand at the stove
  • Perfect melt without burning the tortilla
  • One appliance, one plate, minimal cleanup

This is why it’s earned permanent counter space in my kitchen.


Variations I Make All the Time

Once you get into the habit, it’s endlessly flexible:

  • Chicken instead of steak
  • Leftover taco meat
  • Plain cheese when I’m feeling extra lazy
  • Different cheese blends depending on what’s open

It’s one of those meals that adapts to whatever you already have.
